This recipe has been tweaked to perfection! It's loaded with carrots, coconut, pineapple, walnuts and topped with cream cheese frosting. This is definitely one of my all time most popular cakes. If you love a super moist cake...this is it! All my mini cakes are baked in a scalloped baking cup and come with a tiny spoon.
